I know you meant to mention this too: It's not just a change in variance; you voluntarily give up some immediate +EV. You have to 'earn' the money back when your opponents make further mistakes on the flop and beyond.
Example: say you're in the small blind with AK offsuit, you complete and 8 people see the flop. When you pair up on the flop and bet, they will face closer to 10:1 odds instead of 20:1 odds to chase you. If the late position players are aggressive enough, you can just check-raise and the price will be closer to 5:1.
(Suppose we were playing showdown poker; then, there would obviously be no reason not to make such raises.)
